Smoky Quesadilla Tofu Stir Fry
A fusion of Asian and Mexican flavors, this quick stir-fry is made with crispy tofu and smoky quesadilla strips. Serve over steamed rice for a flavorful and nutritious meal.
Ingredients
- β1 block (14 oz) Tofupressed and drained
- β2 tbsp Quick Chinese Stir-Fry Saucehomemade or store-bought
- β4-6 strips Quesadillatorn into bite-sized pieces
- β1 cup Mixed Bell Pepperssliced
- β1 cup Snow Peastrimmed and sliced
- β1 tsp Gingergrated
- β1 tsp Garlicminced
- β1 tsp Sesame Oilfor cooking
Instructions

Heat 1 tsp of sesame oil in a large skillet or wok over medium-high heat.

Add the grated ginger and minced garlic and stir-fry for 30 seconds.

Add the sliced bell peppers and snow peas and stir-fry for 2-3 minutes.

Add the torn quesadilla strips and stir-fry for 1-2 minutes, until crispy.

Add the pressed tofu and stir-fry for 1-2 minutes, until golden brown.

Pour in the quick Chinese stir-fry sauce and stir-fry for 1 minute, until the sauce is bubbly.
