Smoked Mediterranean Lentil Bowl
A flavorful and hearty vegan bowl filled with the rich flavors of the Mediterranean, featuring smoked lentils and a variety of spices.
Ingredients
- β1 cup dried Lentils
- β2 tsp Smoked Paprika
- β1 tsp Mediterranean seasoning
- β2 tbsp Olive oil
- β1 medium, chopped Red onion
- β2 cloves, minced Garlic
- β1 cup, halved Cherry tomatoes
- β1/4 cup, chopped Fresh parsley
- βto taste Salt and pepper

1. Rinse the lentils and pick out any debris; place them in a medium saucepan with 2 cups of water.

2. Bring the water to a boil, then reduce the heat to a simmer and cook until the lentils are tender, about 20-25 minutes.

3. In a large skillet, heat the olive oil over medium-high heat.

4. Add the chopped red onion and cook until softened, about 3-4 minutes.

5. Add the minced garlic and cook for an additional minute, stirring constantly.

6. Stir in the smoked paprika and Mediterranean seasoning; cook for 1-2 minutes.

7. Add the cherry tomatoes and cook until they start to release their juices, about 3-4 minutes.

8. Fluff the cooked lentils with a fork and stir them into the skillet with the onion and tomato mixture.
