Roasted Mexican Tacos
A flavorful and spicy Mexican-inspired taco recipe made with roasted chicken, topped with fresh cilantro, sour cream, and salsa.
Ingredients
- ●1 lb boneless, skinless chicken breastspreferably organic
- ●1 cup roasted peppersany color
- ●1 medium onionany color
- ●2 cloves garlicminced
- ●1 packet tacos seasoninghomemade or store-bought
- ●4-6 corn tortillas breadpreferably handmade or store-bought
- ●1 cup quick salsahomemade or store-bought
- ●1 cup sour creampreferably organic
- ●1 bunch fresh cilantrochopped

Preheat oven to 400°F (200°C).

Season chicken breasts with tacos seasoning, salt, and pepper.

Place the chicken on a baking sheet and roast in the oven for 20-25 minutes, or until fully cooked.

While the chicken is cooking, roast peppers in the oven for 20-25 minutes, or until tender.

Sauté the onion and garlic in a pan over medium heat until softened.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the tacos by placing a piece of chicken on each tortilla, followed by roasted peppers, onion, and garlic.

Top each taco with a dollop of sour cream, a sprinkle of cilantro, and a spoonful of salsa.
