Italian Beef Saganaki
A classic Italian dish featuring seared beef saganaki served with a side of roasted vegetables.
Ingredients
- β1 pound beef saganakiSlice into 1/2-inch thick pieces
- β2 tablespoons olive oil
- β2 cloves garlicMinced
- β1 teaspoon italian seasoning
- β1/2 teaspoon salt
- β1/4 teaspoon pepper
- β2 roasted red peppersSliced
- β2 roasted zucchiniSliced

1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

2. Add the beef saganaki to the skillet and sear for 2-3 minutes on each side, or until browned.

3. Transfer the beef to a plate and set aside.

4. In the same skillet, add the remaining 1 tablespoon of olive oil.

5. Add the minced garlic and cook for 1 minute, or until fragrant.

6. Add the roasted red peppers and zucchini to the skillet and cook for 2-3 minutes, or until tender.

7. Add the italian seasoning, salt, and pepper to the skillet and stir to combine.

8. Return the beef to the skillet and stir to coat with the sauce.

9. Serve the beef and vegetables hot, garnished with parsley if desired.
