German Boudin Sausage Curry
A rich and flavorful curry made with German boudin sausage, served with a side of crispy potatoes and fresh naan bread.
Ingredients
- β450g German boudin sausageYou can also use other German sausage varieties
- β2 tsp Curry powderStore-bought or homemade
- β1 large OnionChopped
- β2 cloves GarlicMinced
- β2 cm GingerGrated
- β1 Red bell pepperChopped
- β2 large PotatoesChopped
- β4-6 pieces Naan breadHomemade or store-bought
- β150ml YogurtPlain, for serving
- βchopped Fresh cilantroFor garnish

Heat a large pan over medium-high heat and brown the boudin sausage, about 5 minutes.

Remove the sausage from the pan and set aside.

Reduce heat to medium and sautΓ© the chopped onion, minced garlic, and grated ginger until softened, about 5 minutes.

Add the curry powder and cook for 1 minute, stirring constantly.

Add the chopped red bell pepper and cook for another 2 minutes.

Add the chopped potatoes, browned boudin sausage, and 1 cup of water to the pan.

Bring the mixture to a simmer, reduce heat to low, and cook for 15-20 minutes, or until the potatoes are tender.

Warm the naan bread according to package instructions.

Serve the curry with naan bread, a dollop of yogurt, and garnished with chopped cilantro.
