Spiced Stuffed Peppers with Mexican Influence
A fusion of Indian and Mexican flavors, these stuffed peppers are a flavorful twist on traditional stuffed peppers.
Ingredients
- β4 bell peppersany color
- β1 onionchopped
- β3 cloves garlicminced
- β1 tsp ground cuminground
- β1 tsp ground corianderground
- β1/2 tsp cayenne pepperoptional
- β1 tsp chili powdermexican style
- β1 cup monterey jack cheeseshredded
- β1/2 cup cheddar cheeseshredded

Preheat oven to 375Β°F (190Β°C).

Cut off the tops of the bell peppers and remove seeds and membranes.

In a large skillet, heat oil over medium-high heat. Add onion and cook until softened.

Add garlic, cumin, coriander, and cayenne pepper (if using) and cook for 1 minute.

Stir in chili powder and cook for an additional minute.

Stuff each bell pepper with the mixture and top with shredded cheese.

Place peppers in a baking dish and cover with foil.

Bake for 25 minutes, then remove foil and bake for an additional 10-15 minutes.
