Shrimp and Risotto
A classic Italian dish featuring shrimp and creamy risotto. Quick and flavorful, this recipe is perfect for a weeknight dinner.
Ingredients
- β1 pound Shrimpfresh, peeled, and deveined
- β1 cup Risottowhite or brown, Arborio
- β2 tablespoons Olive Oil
- β1/4 cup White Winedry, optional
- β2 tablespoons Butter
- β1/2 cup Parmesan Cheesegrated
- β2 cloves Garlicminced
- βto taste Salt
- βto taste Black Pepper
Instructions

Heat the olive oil in a large skillet over medium heat.

Add the garlic and cook for 1-2 minutes, until fragrant.

Add the shrimp and cook for 2-3 minutes, until pink and cooked through.

Remove the shrimp from the skillet and set aside.

Add the white wine (if using) to the skillet and cook until reduced by half.

Add the butter to the skillet and stir until melted.

Add the risotto to the skillet and cook for 2-3 minutes, stirring constantly.

Add 1 cup of hot water to the skillet and stir until absorbed.

Repeat the process of adding water and stirring until the risotto is cooked.

Return the shrimp to the skillet and stir to combine.
