Quick Indian Curry with Lettuce Wrap
A simple and flavorful Indian-inspired curry served with a crisp lettuce wrap, perfect for a quick weeknight dinner.
Ingredients

- β4 leaves lettuce
- β1 pound chicken breastboneless, skinless
- β1 medium onion
- β2 cloves garlic
- β1/2 cup coconut milk
- β1/4 cup water
- βto taste salt
- βto taste black pepper

Heat oil in a large skillet over medium-high heat.

Add onion and garlic and cook until softened, about 3-4 minutes.

Add chicken breast and cook until browned on both sides and cooked through, about 5-6 minutes.

Remove chicken from skillet and set aside.

Add curry and quick to skillet and cook for 1-2 minutes, stirring constantly.
