Carnitas Tacos with Sauerkraut and Salsa
A twist on traditional carnitas tacos with the addition of tangy sauerkraut and a fresh homemade salsa.
Ingredients
- β1 pound pork shoulderboneless
- β2 tablespoons lard or vegetable oilfor frying
- β1 cup sauerkrautdrained and rinsed
- β1 medium oniondiced
- β3 cloves garlicminced
- β1 teaspoon cumindried
- β1 teaspoon chili powderdried
- β1/2 teaspoon saltto taste
- β1/4 cup fresh cilantrochopped
- β4 lime wedgesfor serving

Preheat the oven to 300Β°F (150Β°C).

In a large Dutch oven, heat the lard or oil over medium heat.

Add the onion and cook, stirring occasionally, until softened, about 8 minutes.

Add the garlic and cook for 1 minute.

Add the pork, cumin, chili powder, and salt. Cook, stirring occasionally, until the pork is browned on all sides, about 5 minutes.

Transfer the Dutch oven to the preheated oven and braise the pork until tender, about 2 hours.

After 1 hour, add the sauerkraut to the Dutch oven and stir to combine.

When the pork is tender, remove it from the oven and let it rest for 10 minutes.

Shred the pork with two forks and stir in the chopped cilantro.

Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the tacos by spooning the pork onto a tortilla and topping with a squeeze of lime juice, a sprinkle of cilantro, and a spoonful of sauerkraut.
