Vietnamese Spring Rolls
Delicate and crunchy spring rolls filled with fresh vegetables and served with a sweet and spicy dipping sauce. A classic Vietnamese appetizer or snack.
Ingredients
- β1 package rice paper
- β1 package spring rolls
- β1 cup shredded carrots
- β1 cup shredded cabbage
- β1 cup bean sprouts
- β1/4 cup mint leaves
- β1 cup peanut sauce
- β2 tablespoons honey

Fill a large bowl with warm water.

Soak the rice paper in the water for about 10-15 seconds or until it becomes soft and pliable.

Remove the rice paper from the water and place it on a clean surface.

Arrange a few mint leaves in the center of the rice paper.

Add a few spoonfuls of shredded carrots, cabbage, and bean sprouts on top of the mint leaves.

Fold the bottom half of the rice paper up over the filling, then fold in the sides and roll up the spring roll.

Repeat with the remaining ingredients.

Serve the spring rolls with peanut sauce for dipping.
