Eastern Fried Rice
A classic quick and easy eastern dish made with leftover rice and a variety of vegetables. This recipe is perfect for a weeknight dinner.
Ingredients
- β2 cups Cooked ricepreferably day-old rice
- β2 tablespoons Vegetable oil
- β2 eggs Scrambled eggsbeaten
- β1 medium Diced onion
- β1 medium Diced carrot
- β1 cup Diced cabbage
- β2 tablespoons Soy sauce
- βto taste Salt and pepper
Instructions

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the scrambled eggs to the skillet and cook until they are set, breaking them up with a spatula as they cook.

Add the diced onion, carrot, and cabbage to the skillet and cook until the vegetables are tender-crisp.

Add the cooked rice to the skillet and stir-fry for 2-3 minutes, breaking up any clumps with a spatula.

Add the soy sauce, salt, and pepper to the skillet and stir-fry for another minute.

Transfer the fried rice to a serving platter and serve hot.

Garnish with chopped green onions and serve immediately.
