Malaysian Satay with Pineapple Salsa
A flavorful and spicy Malaysian-inspired satay dish served with a sweet and tangy pineapple salsa. Perfect for a quick and easy dinner.
Ingredients
- ●1 pound Chicken breastcut into bite-sized pieces
- ●1 can Coconut milkfull-fat
- ●1 cup Pineapplediced
- ●1 medium Red oniondiced
- ●1 medium Red bell pepperdiced
- ●1 Jalapeñoseeded and finely chopped
- ●2 inches Gingergrated
- ●2 tablespoons Lime juice
- ●2 tablespoons Soy sauce
- ●2 tablespoons Brown sugar

In a blender or food processor, combine coconut milk, ginger, lime juice, soy sauce, and brown sugar. Blend until smooth.

Thread chicken pieces onto skewers, leaving a small space between each piece.
