Malaysian Satay with Sticky Molasses Sauce
A classic Malaysian dish featuring marinated meat skewers served with a sweet and sticky molasses sauce. Perfect for a quick and delicious meal.
Ingredients
- β500g chicken breastcut into 1-inch pieces
- β200ml coconut milk
- β50g molassessee notes for sauce recipe
- β20g fish sauce
- β20g lime juice
- β20g brown sugar
- β3 cloves garlicminced
- β1 tbsp coriander
- β1 tsp salt
- β2 tbsp peanut oilfor grilling

In a large bowl, whisk together coconut milk, fish sauce, lime juice, brown sugar, garlic, coriander, and salt.

Add the chicken pieces to the marinade and mix well to coat.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

Preheat a grill or grill pan to medium-high heat.

Thread the marinated chicken onto skewers, leaving a small space between each piece.

Brush the grill or grill pan with peanut oil to prevent sticking.

Grill the satay for 5-7 minutes per side, or until cooked through.

Meanwhile, combine molasses, brown sugar, and lime juice in a small saucepan.
