Quick Chicken Curry
A simple and delicious Indian-inspired dish that can be ready in under 30 minutes. Perfect for a weeknight dinner.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β2 teaspoons curry powderadjust to taste
- β2 tablespoons butterunsalted
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 cup canned diced tomatoes14 oz can
- β1 cup chicken brothlow sodium
- βto taste saltoptional
- βto taste black pepperoptional

1. Heat butter in a large skillet over medium-high heat.

2. Add chicken and cook until browned, about 5 minutes.

3. Remove chicken from skillet and set aside.

4. Add onion and garlic to skillet and cook until softened, about 3 minutes.

5. Stir in curry powder and cook for 1 minute.
