Polish Fermented Beet Soup
A hearty, comforting soup made with fermented beets and a hint of Polish spices.
Ingredients

- ●1 cup Quick-cooking potatoes
- ●1/2 pound Polish sausage
- ●1 teaspoon Ayurvedic spices
- ●2 tablespoons Dish liquid
- ●4 cups Bowl water
Instructions

Heat oil in a large pot over medium heat.

Add the Polish sausage and cook until browned, about 5 minutes.

Add the fermented beets, potatoes, and ayurvedic spices. Cook for 10 minutes.

Pour in the dish liquid and bowl water. Bring to a boil.

Reduce heat and simmer for 20 minutes.

Purée the soup with an immersion blender or regular blender.

Season with salt and pepper to taste.

Serve hot, garnished with chopped fresh herbs if desired.

Cook the Polish sausage to an internal temperature of 160°F (71°C).

Let the soup cool to room temperature before refrigerating or freezing.
