Ethiopian Sambusa Duck Fritters
A twist on traditional Ethiopian sambusa, these crispy fritters are filled with duck and spices. Perfect as a snack or appetizer.
Ingredients
- ●1 pound Duck, boneless and skinlessCut into small pieces
- ●2 cups, crumbled Quick Ethiopian Injera BreadToasted in a pan until crispy
- ●1 cup Vegetable oilFor frying
- ●2 teaspoons Sambusa spice blendAvailable at most Middle Eastern or African markets
- ●1/2 cup Onion, finely choppedSautéed until softened
- ●2 cloves Garlic, mincedSautéed until fragrant
- ●1 teaspoon SaltTo taste
- ●1/2 teaspoon Black pepperTo taste
- ●1/4 cup BreadcrumbsTo help bind the mixture

Preheat the oil in a deep frying pan to 350°F (180°C).

In a large bowl, combine the duck, crumbled injera, sambusa spice blend, onion, garlic, salt, and black pepper. Mix well.

Add the breadcrumbs to the bowl and mix until the mixture is well combined.

Using your hands, shape the mixture into small patties, about 1 1/2 inches (3.8 cm) in diameter and 1/2 inch (1.3 cm) thick.

Carefully place the patties in the hot oil and fry until they are golden brown and crispy, about 3-4 minutes per side.

Using a slotted spoon, remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
