Thai Lamb Tagine
A flavorful and aromatic Thai-inspired dish made with lamb, inspired by the spices of Ethiopia.
Ingredients
- β1 1/2 pounds lamb shoulder
- β2 tablespoons coconut oil
- β1 medium onionchopped
- β2 inches gingergrated
- β2 tablespoons Thai red curry paste
- β2 tablespoons tomato paste
- β2 Thai red chiliessliced
- β3 cloves garlicminced
- β2 tablespoons fish sauce
- β1 tablespoon sugar
- β2 cups water

Heat oil in a large Dutch oven or clay tagine over medium-high heat.

Brown the lamb on all sides, then set aside.

Add onion and cook until softened, about 5 minutes.

Add ginger, curry paste, and chilies; cook for 1 minute.

Add tomato paste and cook for 1 minute.

Add garlic and cook for 1 minute.

Add fish sauce and sugar; stir to combine.

Add browned lamb, water, and bring to a boil.

Transfer to the oven and braise at 300Β°F for 2 hours.

Skim off excess fat and adjust seasoning.
