Spicy Vegetable Stew
A hearty and flavorful Indian-inspired stew made with a variety of vegetables and spices. Perfect for a cold winter night.
Ingredients
- β1 pound quick-cooking potatoesdiced
- β2 medium crunchy carrotspeeled and grated
- β1 small head ukrainian-style cabbageshredded
- β1 can stew beef substitutedrained and rinsed
- β1 tablespoon stew seasoning
- β1 teaspoon curry powder
- β1 can coconut milkfull-fat
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tablespoons olive oil

Heat the oil in a large pot over medium heat.

Add the onion and garlic and cook until softened, about 5 minutes.

Add the curry powder and cook for 1 minute, stirring constantly.

Add the cabbage, carrots, potatoes, and beef substitute. Cook for 5 minutes, stirring occasionally.

Add the stew seasoning and coconut milk. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20 minutes.

Season with salt and pepper to taste.
