Kuru Fasulye with Mushrooms
A hearty Turkish stew made with white beans, mushrooms, and spices.
Ingredients
- β1 cup white beans (kuru fasulye)canned or cooked from scratch
- β1 cup mushroomssliced
- β1 medium onionchopped
- β2 cloves garlicminced
- β2 tablespoons tomato pasteoptional
- β2 tablespoons olive oilfor sautΓ©ing
- β2 cups waterfor stewing
Instructions

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for another minute.

Add the sliced mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the tomato paste (if using), white beans, and water. Stir to combine.

Bring the mixture to a simmer and cook until the stew has thickened slightly, about 20-25 minutes.

Season with salt and pepper to taste.
