Mexican Vegan Paccheri
A flavorful and nutritious vegan pasta dish inspired by Mexican cuisine, featuring roasted vegetables and a tangy sauce.
Ingredients
- β8 oz Paccheri pasta
- β1 Roasted red onion
- β1 Roasted bell pepper
- β14.5 oz Canned tomatoescrushed
- β2 Vegan chipotle peppersin adobo sauce
- β1/4 cup Fresh cilantrochopped
- β2 tbsp Lime juice
- β2 tbsp Olive oil
- βto taste Salt
- βto taste Black pepper

Preheat the oven to 425Β°F (220Β°C).

Toss the red onion and bell pepper with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes or until tender.

Cook the paccheri pasta according to the package instructions. Drain and set aside.

In a blender or food processor, combine the roasted onion and pepper, canned tomatoes, chipotle peppers, and lime juice. Blend until smooth.

In a large skillet, combine the blended sauce and cooked pasta. Toss to combine and season with salt and pepper.
