Mexican Pork Chops with Braised Chops Curry
A flavorful Mexican-inspired dish featuring tender pork chops, a rich braised curry sauce, and the convenience of quick cooking. Perfect for a weeknight dinner.
Ingredients

- β2 tablespoons Vegetable Oil
- β1 medium Onion
- β2 cloves Garlic
- β1 can Diced Tomatoes
- β2 tablespoons Mexican Curry Powder
- β2 cups Chicken Broth
- β1 cup Sour Cream
- βchopped (for garnish) Cilantro

Preheat oven to 400Β°F (200Β°C).

Season the pork chops with salt and pepper. In a large skillet, heat 1 tablespoon of oil over medium-high heat.

Sear the pork chops for 2-3 minutes per side, then transfer to a baking sheet and set aside.

In the same skillet, add the remaining 1 tablespoon of oil. Cook the onion and garlic until softened, about 3-4 minutes.

Stir in the diced tomatoes, curry powder, and chicken broth. Bring to a simmer and cook for 5 minutes.

Return the pork chops to the skillet and spoon some of the curry sauce over the top.

Transfer the skillet to the preheated oven and braise for 15-20 minutes, or until the pork is cooked through.
