Smoky Spanish Tortilla
A Mexican twist on the classic Spanish tortilla, adding smoky flavor from chipotle peppers.
Ingredients
- β2 smoked chipotle peppers in adobo saucediced
- β1 quenched tortillacut into small pieces
- β1/4 cup cornmealto thicken the tortilla mixture
- β1 oniondiced
- β2 cloves garlicminced
- β6 eggsbeaten
- β1 cup shredded cheesesuch as queso fresco or Monterey Jack
- β salt and pepperto taste

Heat the oven to 375Β°F (190Β°C).

In a large skillet, heat 2 tablespoons of oil over medium heat.

Add the diced onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute more.

Add the diced chipotle peppers and cook for 1 minute.

Add the tortilla pieces and cook until they start to brown, about 3-4 minutes.

In a large bowl, whisk together the beaten eggs and a pinch of salt and pepper.

Add the cooked tortilla mixture to the bowl and stir in the cornmeal and shredded cheese.

Pour the mixture into a greased 9-inch (23cm) round baking dish.

Bake for 35-40 minutes, or until the edges are golden brown and the center is set.

Remove from the oven and let cool for 5 minutes before slicing and serving.
