Norwegian Tofu Kjottkaker
A vegan version of traditional Norwegian Kjottkaker using silken tofu and kjottkaker.
Ingredients
- β1 block (14 oz) silken tofudrained and crumbled
- β1 package (12 oz) kjottkakerbroken into small pieces
- β1 tsp pepperyblack pepper
- β1 cup (120g) gratindiced
- β1 cup (240ml) quenchedwater

1. Preheat a non-stick skillet or griddle over medium heat.

2. In a large bowl, combine the crumbled tofu, broken kjottkaker, and diced gratin.

3. Add the peppery black pepper and mix well.

4. Add the quenched water and mix until a thick, but pourable batter forms.

5. Using a 1/4 cup measuring cup, scoop the batter onto the preheated skillet.

6. Flatten the batter slightly with a spatula.

7. Cook for 3-4 minutes, until the bottom is golden brown.

8. Flip the Kjottkaker and cook for an additional 3-4 minutes.
