Japanese Beef Stew
A hearty and flavorful Japanese-inspired beef stew made with a variety of vegetables and served over a bed of steaming hot rice.
Ingredients
- β1 pound Beef
- β1 large head Brasssuch as bok choy or napa cabbage
- β1 large Bowlfor serving
- β2 cups beef broth Stew
- β1 tablespoon soy sauce German
- β1 tablespoon Gochujang Korean
- β1/4 cup green onions, chopped Quenched

In a large pot or Dutch oven, heat 2 tablespoons of oil over medium-high heat.

Add the beef and cook until browned on all sides, about 5 minutes.

Remove the beef from the pot and set aside.

Add the sliced onion to the pot and cook until softened, about 5 minutes.

Add the sliced carrots and cook for an additional 5 minutes.

Add the beef broth, soy sauce, and Gochujang to the pot.

Return the beef to the pot and bring the mixture to a boil.

Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the beef is tender.

Add the chopped bok choy to the pot and cook for an additional 5 minutes, or until wilted.

Serve the beef and stew over a bed of steaming hot rice.
