Egyptian Squid Tagine

Ingredients
- β1 pound Squid tubes cleaned and sliced into 1-inch pieces
- β2 tablespoons Tagine spice mixstore-bought or homemade
- β2 tablespoons Olive oilfor cooking
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1 cup Quenched (dry white wine)optional
- β1 cup Vegetable brothhomemade or store-bought
- β1/4 cup Fresh parsleychopped for garnish
- β1 teaspoon Saltto taste
- β1/2 teaspoon Black pepperto taste

Heat the oil in a large saucepan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for another minute.

Add the squid, tagine spice mix, salt, and pepper. Cook for 2-3 minutes, until the squid starts to change color.

Add the wine (if using) and cook until the liquid has almost completely evaporated, about 2-3 minutes.

Reduce the heat to low and cook, covered, for 10-12 minutes, or until the squid is tender.
