Japanese Oyakodon
Japanese Oyakodon is a popular Japanese dish consisting of chicken and egg cooked in a savory sauce and served over a bed of Japanese rice.
Ingredients
- β1 cup Buckwheat Soba Noodlespreferably Japanese buckwheat soba noodles
- β1 pound Boneless, Skinless Chicken Thighscut into bite-sized pieces
- β2 Large Eggsbeaten
- β2 tablespoons Soy Saucedivided
- β2 tablespoons Sake (Japanese Rice Wine)optional
- β1 tablespoon Sugar
- β2 tablespoons Dashi BrothJapanese cooking stock
- β1 tablespoon Sesame Oil
- β1/4 cup Green Onionschopped
- β1 tablespoon Sesame Seedsoptional

Cook buckwheat soba noodles according to package instructions.

In a large skillet or wok, heat sesame oil over medium heat.

Add chicken and cook until browned, about 5-7 minutes.

Remove chicken from skillet, set aside.

Add soy sauce, sake (if using), sugar, and dashi broth to skillet.

Bring sauce to a simmer and cook for 2-3 minutes.

Add beaten eggs to skillet, scramble until cooked through.
