Eastern Stuffed Kabocha Squash
A delicious and healthy gluten-free dish from the Middle East, stuffed with sweet kabocha squash and a mix of savory spices.
Ingredients
- β1 medium Kabocha Squash
- β1 sheet Quaintly Flaky Pastry
- β1 tsp Eastern Spices (cumin, coriander, cinnamon)
- β1/4 cup Middle Eastern Herbs (parsley, dill, mint)
- β1 unit Tagine (or slow cooker)
- β2 tbsp Olive Oil
- βto taste Salt
- βto taste Black Pepper
- β1/4 cup Greek Yogurt

Preheat oven to 375Β°F (190Β°C).

Cut the kabocha squash in half and scoop out the seeds.

In a bowl, mix together the eastern spices, middle eastern herbs, and olive oil.

Brush the pastry with a little olive oil and sprinkle with the spice mixture.

Place the squash halves on the pastry and spoon the yogurt over the top.

Fold the pastry over the squash and brush with a little olive oil.

Place the tagine or slow cooker over the squash and cover with a lid.

Cook for 45-50 minutes or until the pastry is golden brown and the squash is tender.
