French Plantain Empanadas
A French twist on the traditional Venezuelan empanada, filled with caramelized plantain.
Ingredients

- ●1/4 cup Vegetable Shorteningchilled
- ●2 cups All-purpose Floursifted
- ●1 tsp Saltfine
- ●1 tsp Granulated Sugaroptional

1. Peel the plantains and slice into 1-inch rounds.

2. In a large skillet, heat 2 tablespoons of vegetable shortening over medium heat.

3. Add the plantain slices and cook, stirring occasionally, until caramelized and golden brown.

4. In a separate bowl, combine flour, salt, and granulated sugar (if using).

5. Gradually add the shortening to the dry ingredients and mix until a dough forms.

6. Divide the dough into 8 equal pieces.

7. Roll each piece into a ball and then flatten into a disk.

8. Place a few slices of caramelized plantain in the center of each disk.

9. Fold the dough over the filling and press the edges together to seal.

10. Brush tops with a little water and bake in a preheated oven at 375°F (190°C) for 15-20 minutes.
