Spanish Gazpacho
Refreshing cold soup originating from Andalusia, made with tomatoes and other vegetables.

Ingredients
- β2 lbs tomatoescanned or fresh
- β1/4 cup quaintbread, crust removed and torn into small pieces
- β1/2 cup pabread, crust removed and torn into small pieces
- β1/4 cup ambred wine vinegar, or to taste
- β1/2 cup tomaquetcanned or fresh, chopped
- β1/4 cup olive oiloptional, for serving
- β1 cup wateradd to desired consistency

1. In a blender or food processor, puree the tomatoes, quaint, pa, amb, and tomaquet until smooth.

2. With the blender or food processor running, slowly pour in the water until the desired consistency is reached.

3. Taste and adjust the seasoning as needed.

4. Chill the gazpacho in the refrigerator for at least 30 minutes before serving.
