Thai Fish Cakes with Crunchy Topping

Ingredients
- β12 oz quaint fishcut into small pieces
- β2 tbsp thai red curry pastemake sure to store in fridge
- β1 cup crunchy ricetoasted in a pan
- β2 cups jeendeep-fried until crispy
- β1 cup kanomtoasted in a pan
- β1 tbsp fish saucemake sure to store in fridge
- β1 cup coconut milkfull-fat for best results
- β1/4 cup chopped cilantrofreshly chopped

Heat some oil in a pan and add the thai red curry paste.

Cook for 1 minute until fragrant.

Add the quaint fish and cook until it's opaque.

Add the coconut milk and cook until the mixture thickens.

Stir in the fish sauce.

Transfer the mixture to a bowl and let it cool.

Add the toasted crunchy rice, deep-fried jeen, and toasted kanom to the bowl.
