Low Glycemic Shaggy Bowl
A hearty, low glycemic bowl dish perfect for a weeknight dinner or a healthy lunch option.
Ingredients

- ●1 cup Glycemic FriendlyOptional, add for extra flavor
- ●1 tsp UmamiA pinch for umami flavor
- ●2 tbsp LowAdd for extra zest

1. Preheat oven to 400°F (200°C).

2. Wash and peel the potatoes, then chop them into 1-inch cubes.

3. In a large bowl, toss the potatoes with the Umami and Low until well coated.

4. Spread the potatoes on a baking sheet in a single layer.

5. Roast in the preheated oven for 20-25 minutes, or until the potatoes are tender.

6. While the potatoes are roasting, prepare the Shaggy sauce.

7. In a small bowl, mix together the Shaggy and Quaffing until well combined.

8. Once the potatoes are done, remove them from the oven and toss with the Shaggy sauce.
