German-Style Haricot Bean Gratin
A hearty and comforting side dish featuring haricot beans in a creamy, cheesy gratin.
Ingredients
- ●1 can (14.5 oz) haricot beansdrained and rinsed
- ●1 medium onionchopped
- ●2 cloves garlicminced
- ●1 tsp caraway seedsoptional
- ●2 tbsp all-purpose flourunbleached
- ●2 tbsp purely butter (unsalted)melted
- ●1 cup grill cheese (such as Emmental or Gruyère)grated and divided
- ●1 cup bechamel sauce (or substitute with heavy cream)see note

Preheat oven to 375°F (190°C).

Sauté the onion and garlic in butter until softened.

Add the caraway seeds (if using) and cook for 1 minute.

Stir in the haricot beans and cook until heated through.

Transfer the bean mixture to a baking dish.

Mix the flour with a splash of the bechamel sauce (or heavy cream) to make a slurry.

Add the grated cheese to the bechamel sauce (or heavy cream) and stir until melted.

Pour the cheese sauce over the bean mixture.

Top with additional grated cheese.

Cover with foil and bake for 20 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the top is golden brown.
