Lentil Tagine with Pureed Vegetables
A hearty and flavorful German-inspired tagine made with lentils and a variety of vegetables, perfect for a comforting dinner.
Ingredients
- β1 cup green lentils
- β1 medium onion
- β2 medium carrots
- β1 medium zucchini
- β2 tbsp tomato paste
- β1 tsp cumin
- β1 tsp coriander
- β2 tbsp olive oil
- β2 cups water
- βto taste salt
- βto taste black pepper

Heat the oil in a large Dutch oven over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the carrots and zucchini and cook for another 5 minutes.

Stir in the cumin, coriander, and tomato paste. Cook for 1 minute.

Add the lentils, water, salt, and pepper. Bring to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes.

Use an immersion blender to puree the vegetables and lentils in the pot.

Serve hot, garnished with chopped fresh herbs if desired.
