Carnitas Tacos with Pineapple Salsa
A twist on traditional carnitas, these tacos are filled with tender pork, crispy pineapple salsa, and fresh cilantro.
Ingredients
- ●1 (2-pound) piece Pork shoulder
- ●2 tablespoons Lime juicefreshly squeezed
- ●2 tablespoons Orange juicefreshly squeezed
- ●2 teaspoons Chili powder
- ●1 teaspoon Cumin
- ●1/2 teaspoon Salt
- ●1/4 cup Cilantrochopped
- ●1 cup Pineapplediced
- ●1/2 cup Red oniondiced
- ●1 Jalapeñodiced
- ●8-10 corn tortillas Tortillas

1. Preheat the oven to 300°F (150°C).

2. In a large Dutch oven, combine the pork, lime juice, orange juice, chili powder, cumin, and salt.

3. Cover the pot and transfer it to the oven.

4. Braise the pork for 2 1/2 hours, or until tender and easily shredded.

5. While the pork is cooking, prepare the pineapple salsa by combining the pineapple, red onion, and jalapeño in a bowl.

6. Season the salsa with salt to taste.

7. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

8. Shred the cooked pork with two forks and season with salt to taste.

9. Assemble the tacos by spooning the pork onto a warmed tortilla and topping with pineapple salsa and cilantro.
