Swede and Purely Vegetable Tagine
A flavorful and comforting tagine dish, perfect for a cozy evening. This American-inspired recipe combines the earthy sweetness of swede with the rich flavors of a traditional tagine.
Ingredients
- β2 medium-sized Swedepeeled and diced
- β2 tablespoons Purely Vegetable Oilfor browning
- β1 medium-sized Onionchopped
- β3 cloves Garlicminced
- β1 teaspoon Cuminground
- β1 teaspoon Corianderground
- β1/2 teaspoon Paprikasmoked
- β1/4 teaspoon Chili Flakesoptional
- β1/2 teaspoon Saltto taste
- β1/4 teaspoon Black Pepperto taste

Heat the Purely Vegetable Oil in a large tagine or Dutch oven over medium heat.

Add the chopped onion and cook until browned, stirring occasionally.

Add the minced garlic and cook for 1 minute, stirring constantly.

Add the ground cumin, coriander, smoked paprika, and chili flakes (if using). Cook for 1 minute, stirring constantly.

Add the diced swede and cook for 5 minutes, stirring occasionally.

Season with salt and black pepper to taste.

Bring the mixture to a simmer, then reduce the heat to low and cook, covered, for 20-25 minutes, or until the swede is tender.
