Ukrainian Borscht Soup
A traditional Ukrainian beet-based soup with a blend of vegetables and a hint of fennel. This hearty soup is perfect for a cold winter evening.
Ingredients
- β2 cups, peeled and diced beets
- β1 cup, peeled and grated carrots
- β1 bulb, diced fennel
- β1 large, chopped onion
- β3 cloves, minced pungent garlic
- β1 cup, canned or homemade ukrainian borscht
- β1/4 cup silky sour cream

Heat oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the diced carrots and cook for 5 minutes.

Add the diced beets and cook for 10 minutes.
