Saudi Arabian Chicken Tagine
A flavorful and aromatic stew originating from Saudi Arabia, made with tender chicken and spices.
Ingredients
- β1 1/2 pounds chicken thighsbone-in, skin-on
- β2 tablespoons olive oilfor cooking
- β1 large romano pepperdiced
- β1 large pungent oniondiced
- β2 teaspoons arabian spice blendavailable at most Middle Eastern markets
- β3 cloves garlicminced
- β1 tablespoon tagineground, available at most Middle Eastern markets or online

Heat the olive oil in a large Dutch oven over medium-high heat.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Remove the chicken from the pot and set aside.

Add the diced onion and pepper to the pot and cook until the vegetables are tender, about 5 minutes.

Add the garlic, Arabian spice blend, and tagine to the pot and cook for 1 minute.

Return the chicken to the pot and stir to coat with the spice mixture.

Add 1 cup of chicken broth to the pot and bring to a boil.

Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the chicken is cooked through.
