Spiced Roast Chicken with Bacon
A flavorful Indian-inspired dish featuring roasted chicken, crispy bacon, and aromatic spices.
Ingredients

- β6 slices baconthick-cut
- β1 tsp roastwhole spice blend
- β1 tsp pungentginger paste
- β1 large onionchopped
- β3 cloves garlicminced
- β1/2 cup yogurtplain
- β2 tbsp lemon juicefreshly squeezed

Preheat oven to 425Β°F (220Β°C).

Rinse the chicken and pat dry with paper towels.

In a small bowl, mix together the roast, pungent, onion, garlic, yogurt, and lemon juice.

Rub the mixture all over the chicken, making sure to get some under the skin as well.

Season the chicken with salt and pepper.

Heat a skillet over medium-high heat and sear the chicken on all sides until browned.

Transfer the chicken to a baking dish and roast in the preheated oven for 45-50 minutes, or until cooked through.

While the chicken is roasting, cook the bacon in a skillet until crispy.
