Kale Pakora with Japanese Twist
A Japanese-inspired take on the Indian classic, kale pakora. Crispy fried kale fritters served with a side of tangy dipping sauce.
Ingredients
- β1 bunch kalecurly or lacinato work well
- β2 cloves pungentgarlic, minced
- β1 cup all-purpose flourfor dusting
- β1/2 cup gram flourchickpea flour
- β1/4 teaspoon baking sodahelps with crispiness
- β1/2 teaspoon garam masalaindian spice blend
- β1/4 teaspoon saltto taste
- β1/2 cup oilvegetable or canola oil
- β2 tablespoons soy saucefor dipping sauce
Instructions

Rinse and dry the kale leaves.

In a blender or food processor, blend the kale, garlic, and gram flour until well combined.

Add the baking soda, garam masala, and salt. Blend until smooth.

Heat the oil in a deep frying pan or a deep fryer to 350Β°F.

Using a spoon, drop small balls of the kale mixture into the hot oil.

Fry until golden brown and crispy, about 3-4 minutes.

Drain the pakora on paper towels.

Mix the soy sauce with a little water to make a dipping sauce.

Serve the pakora hot with the soy sauce dipping sauce.
