Polish Garlic Soup
A hearty, flavorful soup originating from Poland, made with roasted garlic and potatoes.
Ingredients

- β3-4 cloves Garlic
- β2 tablespoons Butter
- β1 medium Onion
- β4 cups Broth
- βto taste Salt
- βto taste Black pepper
- β1 large Bowl
- β1 teaspoon Garlic powder
- βchopped, for garnish Parsley

Preheat the oven to 400Β°F (200Β°C).

Peel and chop the garlic, place on a baking sheet, and roast for 20-25 minutes, or until tender.

Peel and dice the potatoes.

In a large pot, melt the butter over medium heat. Add the diced onion and cook until softened, about 5 minutes.

Add the roasted garlic, potatoes, broth, salt, and pepper to the pot.

Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, or until the potatoes are tender.

Use an immersion blender to puree the soup until smooth.
