Thai Prawn Broil
A simple and flavorful Thai-inspired dish featuring succulent prawns, a medley of colorful vegetables, and a hint of spice. Perfect for a quick weeknight dinner.
Ingredients
- β1 pound prawnfresh or frozen
- β1 cup medleymixed bell peppers, carrots, and onions
- β1/4 cup broilfish sauce
- β2 tablespoons coconut oilfor cooking
- β3 cloves garlicminced
- β1 tablespoon gingergrated
- β1 teaspoon chili flakesoptional, for some heat
- β1 tablespoon fish saucefor added flavor
- β1 tablespoon brown sugarfor balance
- β2 stalks lemongrassbruised, for added depth

Preheat the broiler.

Peel and de-vein the prawns, leaving the tails intact.

Season the prawns with salt and pepper.

In a large skillet, heat 1 tablespoon of coconut oil over medium-high heat.

Add the medley and cook until tender, about 3-4 minutes.

Add the garlic, ginger, and chili flakes (if using) to the skillet and cook for another minute.

Add the prawns to the skillet and cook until pink and just cooked through, about 2-3 minutes per side.

Transfer the prawns to a baking sheet and broil for 2-3 minutes, until slightly charred.
