Kenyan Jerusualem Artichoke Gratin
A delicious and flavorful gratin dish that combines the natural sweetness of Jerusalem artichokes with the spices of Kenyan cuisine. This hearty side dish is perfect for a cold winter's night.

- β4-5 medium Jerusalem artichokespeeled and sliced
- β2 tbsp GheeKenyan style clarified butter
- β1 medium Onionschopped
- β2 cloves Garlicminced
- β1 tsp Cuminground
- β1 tsp Corianderground
- β1 cup Coconut milkfull-fat
- βto taste Salt
- βto taste Black pepper

Preheat the oven to 375Β°F (190Β°C).

In a large saucepan, heat the ghee over medium heat.

Add the chopped onions and cook until they're lightly browned.

Add the minced garlic and cook for 1 minute.

Add the sliced Jerusalem artichokes, cumin, coriander, salt, and black pepper.

Cook for 5-7 minutes or until the artichokes are tender.

Stir in the coconut milk and bring to a simmer.
