Mexican Pike Pilaf
A flavorful Mexican pilaf dish with poached pike and a blend of spices.
Ingredients

- β1 cup Mexican rice pilafstore-bought or homemade
- β1/2 cup diced onion
- β1/2 cup diced bell pepper
- β2 tbsp chopped fresh cilantro
- β2 tbsp lime juice
- β1 tsp ground cumin
- β1/2 tsp smoked paprika
- βto taste salt and pepper

Preheat your oven to 400Β°F (200Β°C).

Line a baking sheet with aluminum foil or parchment paper.

Place the pike fillet on the prepared baking sheet.

Season the pike with salt, pepper, and smoked paprika.

Poach the pike in the oven for 8-12 minutes, or until cooked through.

While the pike is cooking, heat a large skillet over medium-high heat.

Add the diced onion and bell pepper to the skillet and cook until tender.

Add the Mexican rice pilaf to the skillet and cook for 2-3 minutes, stirring constantly.
