Sun-Dried Tomato Pasta
A simple British-inspired pasta dish featuring sun-dried tomatoes and poached chicken.
Ingredients
- β1 cup Sun-dried tomatoes
- β1 breast Poached chicken breast
- β1 pound Pasta (gluten-free)
- β4 tablespoons Butter
- β1/4 cup Fresh basil
- β1/2 cup Parmesan cheese (vegetarian)
- βto taste Salt
- βto taste Black pepper
- β2 tablespoons Olive oil (extra virgin)
Instructions

Bring a large pot of salted water to a boil and cook the pasta according to package instructions.

In a large skillet, melt 2 tablespoons of butter over medium heat.

Add the sun-dried tomatoes and cook for 2-3 minutes, until fragrant.

Add the poached chicken breast to the skillet and stir to combine with the tomatoes and butter.

Season with salt and black pepper to taste.

In a separate bowl, combine the cooked pasta, chicken and tomato mixture, and toss to combine.

Top with grated Parmesan cheese and chopped fresh basil.
