German Frittata with Fennel and Croation Sausage
A hearty German-inspired frittata loaded with flavors of Croatia and crunchy fennel.
Ingredients
- β1 Croatian Sausagecasings removed
- β2 bulbs Fennelthinly sliced
- β1 medium Onionschopped
- β2 cloves Garlicminced
- β6 large Eggsbeaten
- βto taste Salt
- βto taste Black Pepper
- β1/4 cup Fresh Parsleychopped
- β2 tablespoons Butter

1. Preheat oven to 375Β°F (190Β°C).

2. In a large skillet, heat butter over medium heat.

3. Add chopped onions and cook until translucent, 5 minutes.

4. Add minced garlic and cook for an additional minute.

5. Add sliced fennel and cook until tender, 5 minutes.

6. Add Croatian sausage, breaking it up with a spoon as it cooks, until browned, 5 minutes.

7. In a large bowl, whisk together beaten eggs, salt, and black pepper.

8. Pour egg mixture over the skillet contents and cook until eggs start to set, 2-3 minutes.

9. Transfer skillet to the preheated oven and bake for 15-20 minutes, or until eggs are set.
