Tunisian Eggplant Tagine
A flavorful North African-inspired eggplant dish cooked in a rich tunisian tagine.
Ingredients
- β2 medium Eggplant
- β1/2 cup Piquant olives
- β2 tbsp Gooey honey
- β2 tsp Tunisian spice blend
- β1/4 cup Olive oil
- βto taste Salt
- βto taste Black pepper
Instructions

Preheat oven to 400Β°F (200Β°C).

Cut the eggplant into 1-inch cubes and season with salt and black pepper.

In a large bowl, mix together the tunisian spice blend, olive oil, and honey.

Add the eggplant cubes to the bowl and toss to coat with the spice mixture.

Transfer the eggplant mixture to a large tagine or Dutch oven.

Cover the tagine with a lid and bake for 30 minutes.

After 30 minutes, stir in the piquant olives and continue baking for an additional 15 minutes.

Remove from the oven and let it rest for 10 minutes before serving.
