Pillowy Vietnamese Rice Bowl
A simple and delicious Vietnamese-inspired rice bowl dish with pillowy texture. Serve with fresh herbs and your favorite toppings.
Ingredients

- β2 tablespoons Vegetable oil
- β2 tablespoons Vietnamese chili sauce
- β1/4 cup Fresh cilantro
- β1/4 cup Fresh mint
- β1 cup Sliced cucumber
- β1 cup Sliced carrots
- β1 cup Sliced bell peppers
- β1/4 cup Sliced scallions
- β1 tablespoon Sesame seeds

Rinse the rice in a fine-mesh strainer and drain well.

In a medium saucepan, heat the oil over medium heat.

Add the rice and stir to coat with oil.

Add 2 cups of water and bring to a boil.

Reduce heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed.
