Pillowy Mochi Cake
A traditional Japanese-style cake with a soft, pillowy texture. Made with nutty mochiko flour and topped with a sweet applesauce glaze.
Ingredients
- β1 1/2 cups mochiko flour
- β1 cup granulated sugar
- β1/2 cup applesauce
- β1/2 cup unsweetened coconut milk
- β2 large eggs
- β1 tsp vanilla extract
- β1/4 tsp salt
- β4 tbsp unsalted butter
- β1 tsp baking powder

Preheat the oven to 375Β°F (190Β°C). Grease a 9-inch round cake pan.

Sift the mochiko flour into a large bowl.

Add the sugar, applesauce, coconut milk, eggs, vanilla extract, and salt. Mix until combined.

Melt the butter and add it to the bowl. Mix until smooth.

Add the baking powder and mix until just combined.

Pour the batter into the prepared cake pan.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 5 minutes before transferring it to a wire rack to cool completely.

Once the cake is cool, drizzle with the applesauce glaze (see below).

To make the applesauce glaze, whisk together 1/2 cup applesauce and 2 tbsp granulated sugar until smooth.
