Grilled Thai Pepper Chicken
A spicy Thai-inspired dish featuring grilled chicken and pepper, served with a side of traditional Thai flavors.
Ingredients
- β4 pounds Chicken breastboneless, skinless
- β2 Thai red pepperseeded, sliced
- β1/4 cup Coconut oilfor grilling
- β2 tablespoons Fish saucefor marinade
- β2 tablespoons Soy saucefor marinade
- β1 tablespoon Brown sugarfor marinade
- β1 tablespoon Gingergrated, for marinade
- β2 cloves Garlicminced, for marinade
- β2 tablespoons Lime juicefor marinade
- β1/4 cup Cilantrochopped, for garnish

1. In a blender or food processor, combine fish sauce, soy sauce, brown sugar, ginger, garlic, and lime juice to make the marinade.

2. Place the chicken in a large bowl and pour the marinade over it. Toss to coat and refrigerate for at least 2 hours or overnight.

3. Preheat the grill to medium-high heat.

4. Remove the chicken from the marinade and season with salt and pepper.

5. Grill the chicken for 5-7 minutes per side, or until it reaches an internal temperature of 165Β°F.

6. Meanwhile, brush the slices of Thai red pepper with coconut oil and grill for 2-3 minutes per side, or until they are slightly charred.

7. Once the chicken is cooked, let it rest for 5 minutes before slicing it thinly.

8. Serve the grilled chicken with the charred Thai red peppers and garnish with chopped cilantro.
