Pan-Seared Portuguese Chicken
A classic Portuguese dish featuring pan-seared chicken breasts, marinated in a blend of herbs and spices. This recipe is perfect for a weeknight dinner.
Ingredients
- β4 chicken breastsboneless, skinless
- β2 tablespoons olive oilextra virgin
- β3 cloves garlicminced
- β1 cup chicken broth
- β1/4 cup white wine
- β1/4 cup fresh parsleychopped
- β2 tablespoons fresh oreganochopped
- β2 tablespoons lemon juice
- β1 teaspoon salt
- β1/2 teaspoon black pepper
Instructions

Season the chicken breasts with salt and black pepper.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Sear the chicken breasts for 3-4 minutes on each side, or until browned.

Transfer the chicken to a plate and set aside.

Reduce heat to medium and add the remaining 1 tablespoon of olive oil to the skillet.

Add the minced garlic and cook for 1 minute, until fragrant.

Pour in the chicken broth, white wine, and lemon juice, scraping up any browned bits from the bottom of the skillet.

Bring the mixture to a simmer and cook for 5 minutes, or until slightly reduced.

Return the chicken breasts to the skillet and spoon some of the sauce over the top of each breast.

Continue to cook for an additional 5 minutes, or until the chicken is cooked through and the sauce has thickened.
